Dark Chocolate Holiday Peppermint Bark with Skyr!


The holidays just wouldn't be the same without seasonally-themed goodies! But if you're like me, it doesn't hurt to try and make them a bit healthier, right? That's why this yummy frozen dark chocolate peppermint bark recipe is something I'm super excited about this year! 🎄


There are several ways you can make it--more healthy, less healthy--it's very customizable, but it's pretty simple!


This recipe is a tweaked version of one originally by Williams Sonoma, but if there's chocolate involved, I prefer a dark, low-sugar option, but also if there's going to be yogurt, it's gotta be our Icelandic skyr!! So have fun and enjoy!


Ingredients

  • 12 ounces dark chocolate, chopped (I prefer a 72-85% dark cacao range, but that's just me).

  • 16 ounces of plain Icelandic Skyr (you can use Greek yogurt, too, and you don't have to stick with plain; our maple skyr would add a nice sweetness for those who need a little sweet somethin' 😉).

  • 1/2 teaspoon vanilla extract (unless you use a flavored skyr/yogurt, in which case you can omit)

  • 1/4 cup mini chopped dark chocolate pieces

  • 6 crushed candy canes (or about 3 ounces of any chopped peppermint candy of your choice)

  • 1/2 teaspoon coarse sea salt

  • 1/2 teaspoon peppermint extract (optional)

Directions

  1. Line a baking sheet with parchment paper.

  2. Place chopped dark chocolate in a double boiler over simmering water; heat, stirring often until melted. Add peppermint extract (optional).

  3. Pour the melted chocolate onto the parchment-lined pan, spreading it into an even layer about 1/8 inch thick. Refrigerate until the chocolate just begins to set, about 10 minutes.

  4. Combine skyr (or yogurt) and vanilla extract (unless you use a flavored skyr/yogurt, in which case omit vanilla).

  5. Pour skyr/yogurt mixture over the semi-set chocolate on your pan.

  6. Sprinkle crushed candy cane, mini dark chocolate pieces, and sea salt over the top.

  7. Freeze for about 2 hours (or until skyr is fully set).

  8. Break into pieces and serve frozen! (approximately 16-20 pieces)
